He uses all his know-how to highlight local produce in his sweet and savory culinary specialties. His inspiration comes from regional tradition, and his dishes reflect the seasons that punctuate his creations. When you taste his dishes, your palate will enjoy a unique experience, with the discovery of refined flavors enhanced by aromatic herbs from the jardin des simples.

Jerôme Billochon has chosen the gardens of the Domaine d’Ablon to select the finest produce to enhance your plate. No stay in Normandy is complete without a culinary voyage of discovery of the region’s essential produce. Cream, apples, fish and shellfish are the basic ingredients of Norman gastronomy.

At the domaine, cooking is an art that we sublimate with recipes that are both natural and daring, for an explosion of flavors in your mouth. During your stay, we can, on request, put a chef at your disposal for a lunch with friends, a dinner for two, or even a workshop.

In tune with the seasons and Normandy’s capricious weather, the estate’s fruits and vegetables are close at hand, and grown with respect for the art. The 4,000 m2 French-style kitchen garden is home to the finest seasonal vegetables, which the chef selects to create the finest Normandy recipes.

The jardin des simples, with its 15 squares of aromatic and medicinal plants, is a veritable awakening of the 5 senses. In this garden, each plant has its own story to tell, enhancing your dishes with unique flavors you won’t find anywhere else. From spring to autumn, discover the scents of lemon balm, verbena, lemon thyme, lemongrass, lavender and fragrant geraniums.

The orchard invites you to indulge in sweet delights, with no fewer than 40 varieties of apples and pears, 16 varieties of cherries, 3 varieties of organically grown plums… How could you resist picking them straight from the tree, to savour their exquisite, melt-in-your-mouth taste, just warmed by the gentle Normandy sun? For the more reasonable among you, it’s great to organize a little plum-picking with your children or friends.
